Apricots
Fruits of the apricot (Austrian: Marille) are roundish to oval in shape and have a seam running from the blossom end to the stalk. Their velvety fruit skin can be light yellow to orange or even red in colour and with purple-red spots on its sunny side. The flesh of the apricot is whitish, yellow or intensely orange, it tastes juicy sweet-sour and has a very fine aroma.
The French varieties are particularly popular with German consumers. They are strong in colouration and aroma.
When the fruit is fully ripe, its stone can be removed very easily.

Storage
Apricots should be harvested ready for consumption, as they will not ripen if harvested too early. It is best to buy the fruit as needed and store it in the vegetable compartment for a day if necessary.
